The 1985 vintage produced wines of very great distinction, characterized by their aromatic intensity and well-balanced structure. The ripeness of the grapes and the harvest took place under ideal climatic conditions, thus determining the exceptional quality of the year. 

However, the vineyard was very severely affected by the hard frosts of winter and spring, which destroyed several thousand hectares. Subsequently, the dreary weather hindered the flowering, which started slowly and with difficulty, but fortunately it concluded quickly thanks to the splendid weather that then settled over Champagne.

At harvest, the Pinot Noirs stand out for their fullness and suppleness. The Chardonnays, for their part, express subtle and persistent aromas; they make up 60% of the blend, with the remainder coming from selected growths of Pinot Noirs.

This aged Dom is as much a complex white as it is a stylish Champagne. With the bubbles having faded over the decades, this gently sparkling wine shows how wonderfully Champagnes age. Biscuity with layers of toasted hazelnuts and brioche, the finish has just a touch of sweetness. Generous and complex, this Dom is truly at its mature peak and it reveals how lingering and glorious aged Champagne can be. I am tempted to age all my top Champagnes now for 30+ years!

Drunk from a pristinely preserved original disgorgement, the 1985 Dom Pérignon is inviting and exuberant, bursting with aromas of apples, pears, buttered toast, orange oil, tarte tatin and smoke. On the palate, it's medium to full-bodied, ample and pillowy, with a generous core of fruit, ripe but racy acids and a refined mousse. This bottle ranked a step behind a sublime magnum of this cuvée's P3 rendition that I enjoyed earlier in the year, but it was nonetheless an exquisite Champagne. In both cases, the 1985 is in its prime, so now is a great time to open bottles.

Excellent finesse in this wine that is still fresh with lime and citrus, but it also hints at lovely hazelnut, nutmeg and coffee bean notes. A very long orange-peel-scented finish. A touch lighter than the '82.

Obviously quite old from the deep gold and the developed, biscuity nose. I thought it was from the 1980s when it was served blind. But it is still quite tangy and tense, managing to combine both richness and acidity. Not voluptuous in any way. I wonder whether it will ever relax and really open out?

Dom Perignon

Dom Pérignon is a legendary Champagne House and one of the most renowned in the world. In 1668, a young Benedictine monk, Dom Pierre Pérignon, was appointed procurator at the Abbey of Hautvillers. With the ambition to produce the "best wine in the world", he was deeply inspired and his vision revolutionized viticulture with standards that remain the reference for all champagne wines. The House's commitment is that champagnes can only be produced from a single year's harvest.

Dom Pérignon's productions were highly prized at that time. After Dom Pérignon's death, the price decreased somewhat, but not its popularity. The 1921 vintage is undoubtedly the best vintage. Dom Pérignon champagnes have very long aging potential.
