The world-famous Champagne is produced exclusively in the Champagne region.
Located far north, this region benefits from a cool and humid climate that gives Champagne its typical beautiful acidity. While 7 grape varieties are authorized in Champagne production, only 3 are predominantly used: Pinot Noir, Pinot Meunier, and Chardonnay. For white Champagnes, there are Blancs de Noirs (from black grapes), Blancs de Blancs (from green grapes), and Blancs. Similar to the wine classification in Burgundy, Champagne distinguishes its best plots by classifying them as Grand Cru and Premier Cru.
Vintage Champagne is made exclusively from grapes harvested during the year in question.
Vintage Champagnes spend a minimum of 36 months in the bottle but are generally sold after 4 to 10 years of bottle aging. Made from powerful wines, vintage Champagnes need time to round out and best reveal their virtues. Over the years, the aromatic palette becomes more complex and evolves into tertiary aromas such as honey, stewed fruits, toasted notes...
