An estate born at the heart of the Languedoc's most ambitious appellation

The story of Mas Cal Demoura begins with a figure well known to Languedoc enthusiasts. It was Jean-Pierre Jullien — father of Olivier Jullien, founder of Mas Jullien, the pioneering estate of the Terrasses du Larzac — who created the domaine in the early 1990s on the heights of Jonquières. He knew the site better than anyone: it was on this very terroir that his son had forged his winemaking legend a few years earlier.

In 2003, Isabelle and Vincent Goumard took over the property. Former financial consultants, they had spent months travelling through the vineyards of the Languedoc and Roussillon before discovering this place. Their conviction was immediate. They settled in, learned, trained alongside the best, and committed from the outset to uncompromising viticulture. The conversion to organic farming was quickly followed by a comprehensive biodynamic approach, certified Biodyvin since 2015: natural preparations, biodiversity development, hand tillage, and parcel-by-parcel manual harvesting with rigorous sorting.

The Terrasses du Larzac terroir: freshness and depth

What makes Mas Cal Demoura unique is, first and foremost, its terroir. The Terrasses du Larzac enjoys a singular microclimate within the Languedoc landscape: the Mediterranean sun is permanently tempered by the cool winds descending from the nearby Larzac plateau. Nights remain cool even in the height of summer, the ripening of the grapes is slow, and the aromas develop with a precision that flatland vineyards simply cannot replicate.

This particular context directly explains the style of the wines: where many Languedoc wines play on warmth and concentration, Mas Cal Demoura produces reds and whites of a freshness and tension that are almost northern in character. It is this singularity — southern in soul, yet elegant in form — that has built the estate's reputation among fine wine lovers from the Languedoc around the world.

A parcel-by-parcel, biodynamic approach to reveal each site

Across the estate's sixteen hectares, Isabelle and Vincent Goumard cultivate twelve different grape varieties. This choice of a broad palette is far from incidental: it allows them to match each variety precisely to its site, parcel by parcel, to draw out the very best. Syrah, Mourvèdre, Grenache, Carignan, Cinsault, and Counoise coexist among the reds; Chenin, Roussanne, and Carignan blanc among the whites. Yields are naturally limited to between 15 and 25 hectoliters per hectare — two to three times lower than the regional average.

In the cellar, the philosophy is the same: guide without forcing. Fermentations take place with indigenous yeasts, and aging is carried out in foudres, demi-muids, and concrete tanks depending on the cuvée, without ever imposing new oak as a stylistic signature. The result is a wine that speaks first and foremost of its terroir — tannins of a finesse that is remarkable for a southern vineyard, a palate that is at once generous and fresh, and a length that betrays the ambition of its makers.

Within the Terrasses du Larzac, Mas Cal Demoura has established itself over twenty years as one of the leading addresses of an appellation that nonetheless counts some of the most talented winemakers in the Languedoc. Its neighbor and forerunner, Mas Jullien, remains the appellation's guiding reference — but Mas Cal Demoura approaches that status with a consistency and steadiness that national and international critics unanimously recognize. Other estates in the appellation, such as Domaine de Montcalmès, share this same quest for elegance and precision that has given the age-worthy wines of the Terrasses du Larzac their worldwide reputation.

For the collector, Mas Cal Demoura represents a sound investment: high-level wines, still accessible at reasonable prices, with an aging potential of ten to fifteen years for the finest vintages. The 2017 and 2019 vintages are now at their peak. The 2020, 2021, and 2022 vintages still merit a few more years in the cellar before expressing their full potential.
