Le Mesnil sur Oger exclusively on the heart of the Terroir and on selected plots listed below. Les Vaucherots, Les Coullemets du Midi, Les Finciarts, Les Chétillons are very low-yielding plots, which produce grapes of great depth, significant total acidity, and low pH levels that allow them to be harvested very late and therefore at full maturity.
Production: Grape variety: Pure Chardonnay – Mesnil sur Oger Pressing: Slow, lightly sulfited to allow the musts to work Settling: Light settling – Preservation of fine lees (white, cottony) Barrel vinification: 100% vinified in 228-liter oak barrels. Malolactic fermentation is carried out. Aging: on lees for 11 months, Bâtonnage just after the end of alcoholic fermentation Dosage: 2g/L
