Medium lemon-straw colour. Intensely fragrant nose with aromas of jasmine, cinnamon buttered toast, stewed apples and preserved ginger. Concentrated honey-nut, warm apple tart and spice flavours fill the mouth giving ample flesh to the firm, fine structure. The bubbles are still remarkably frisky and, in harmony with the crisp backbone of acid, make for a relatively youthful, elegant and exquisitely balanced wine. Very long finish.

Fully mature, very rich nose. It was served blind and I guessed it was even older than 1990. Toasty nose and then frisky on the palate. Notably dry finish after quite a sweet palate. Into the phase of tasting like quince. Pungent. Very interesting.

Dom Perignon

Dom Pérignon is a legendary Champagne House and one of the most renowned in the world. In 1668, a young Benedictine monk, Dom Pierre Pérignon, was appointed procurator at the Abbey of Hautvillers. With the ambition to produce the "best wine in the world", he was deeply inspired and his vision revolutionized viticulture with standards that remain the reference for all champagne wines. The House's commitment is that champagnes can only be produced from a single year's harvest.

Dom Pérignon's productions were highly prized at that time. After Dom Pérignon's death, the price decreased somewhat, but not its popularity. The 1921 vintage is undoubtedly the best vintage. Dom Pérignon champagnes have very long aging potential.
