Boasting a gorgeous nose of potpourri, red apples, cinnamon, cream, smoke and a great deal of yeast, the whole table found themselves encapsulated by the bottle's aromatics. The palate still had so much freshness intact. A very lively upfront of red apples and marzipan alongside a prominent lime zest note led into a mid-palate that showed off some mature qualities - baked bread, almonds and biscuit - before this multilayered, fatty finish of stone fruits, butter, cardamom and white pepper across some lively acidity. Truly an exemplary bottle that shows the high point for Dom Pérignon from the 1960s-1980s.

Deep yellow-green, delicately bready, biscuity, hints of grapefruit zest, full-bodied yet gently floral, almost baroque on the palate, hints of dried porcini mushrooms, grated dark chocolate, opulent, showing a berry-like acidity on the finish, with a hint of caramel in the aftertaste. This bottle had perhaps already slightly passed its peak.

Dom Perignon

Dom Pérignon is a legendary Champagne House and one of the most renowned in the world. In 1668, a young Benedictine monk, Dom Pierre Pérignon, was appointed procurator at the Abbey of Hautvillers. With the ambition to produce the "best wine in the world", he was deeply inspired and his vision revolutionized viticulture with standards that remain the reference for all champagne wines. The House's commitment is that champagnes can only be produced from a single year's harvest.

Dom Pérignon's productions were highly prized at that time. After Dom Pérignon's death, the price decreased somewhat, but not its popularity. The 1921 vintage is undoubtedly the best vintage. Dom Pérignon champagnes have very long aging potential.
