Wine Spectator December - 1996
Wine Spectator
Beautiful. Offers great toasty, earthy aromas, lively but mellow fruit flavors and a lingering finish. Seems suave and sophisticated, even better than when reviewed earlier. Tempting now, but should improve.

Falstaff January - 2004
Falstaff
Deep yellow, alongside plenty of mousse on the palate. Extremely crisp and clean on the nose, initially somewhat restrained, exuberantly youthful and fresh, then some biscuit and mocha nuances emerge. With great complexity on the palate, concentrated sweetness, finesse and an impressive length, August F. Winkler calls its structure Gothic because its lines are so defined. The finish has a delicate hibiscus note. Breathtakingly elegant Champagne.

Dom Perignon

Dom Pérignon is a legendary Champagne House and one of the most renowned in the world. In 1668, a young Benedictine monk, Dom Pierre Pérignon, was appointed procurator at the Abbey of Hautvillers. With the ambition to produce the "best wine in the world", he was deeply inspired and his vision revolutionized viticulture with standards that remain the reference for all champagne wines. The House's commitment is that champagnes can only be produced from a single year's harvest.

Dom Pérignon's productions were highly prized at that time. After Dom Pérignon's death, the price decreased somewhat, but not its popularity. The 1921 vintage is undoubtedly the best vintage. Dom Pérignon champagnes have very long aging potential.
