Dom Pérignon is a legendary vintage champagne in France. In 1668, a young monk Dom Pierre Pérignon,moved the mission to create the "world's best wine". Such ambition revealed in this young monk thirty years ago, a visionary and extraordinary audacity. The engagement of Dom Perignon is that all the Champagnes must be produced only with the harvest of the same year.
The productions of Dom Pérignon were very popular at that time. When Dom Pérignon died, the price dropped somewhat, but not its popularity. The 1921 vintage is unquestionably the best vintage. Dom Pérignon champagnes are very long aging.

In August 1999;on the whole; it showed well: lively; nutty fragrance; good length and finish. Three months later very pale; shade of lemon-like acidity; firm, with a touch of sweetness to temper its steeliness. I gave it exactly the same rating.
Elegant, with a smooth, creamy texture, this Champagne shows evolved aromas and flavors of toast, honey, grilled nuts and mushrooms in a soft yet balanced structure. Well done.
