Slightly greenish-yellow, golden shimmer, fine, well-sustained mousse. Initially restrained fruit, but fine yellow fruit nuances emerge gently, a hint of blossom honey, delicate herbal spice, nutty pastry notes. On the palate multi-layered and juicy, nuances of acacia honey, integrated acidity, fine peach note, mineral, silky, persistent minerality on the finish. Elegant, enormous length, nougat finish. Currently a legendary Champagne.

Very concentrated and very dry on the finish - perhaps because of the relatively high acidity. Quite a bit of development on the nose but no excess richness. Very firm and well out of its shell. Complex and tight knit. A 'serious' Dom P better suited to the table than more casual drinking. Magnificent concentration.

The vintage I have drank the most (more than 20 occasions) and a wine that is developing so slowly that it appears to be held in suspended animation. When first released, this was zesty and mouth-watering, the bracing acidity held in check with a decent level of sugar in the dosage: compact, cool-fruited, and very tasty. The acidity has calmed down in the intervening years, aromatic volume and complexity is building, although the tiny spike of greenness is ever-present in the background. Becoming nicely toasty. Such a shame there are no magnums! Drink 2018-2035.

Dom Pérignon is a legendary Champagne House and one of the most renowned in the world. In 1668, a young Benedictine monk, Dom Pierre Pérignon, was appointed procurator at the Abbey of Hautvillers. With the ambition to produce the "best wine in the world", he was deeply inspired and his vision revolutionized viticulture with standards that remain the reference for all champagne wines. The House's commitment is that champagnes can only be produced from a single year's harvest.

Dom Pérignon's productions were highly prized at that time. After Dom Pérignon's death, the price decreased somewhat, but not its popularity. The 1921 vintage is undoubtedly the best vintage. Dom Pérignon champagnes have very long aging potential.
