Very green. Real autolysis character – very Dom P, very flattering! Surprisingly sweet on the palate though which jars a bit. Or is this just the richness of the vintage? Certainly this is the easiest wine to drink so far in the tasting… Very persistent mousse. Lots of interesting components all in balance. Quite long.

Undoubtedly a great and young cathedral: bright greenish-yellow, still somewhat heavy in the perlage, initially delicately vegetal, smoky, gently nutty, with an undertone of peanut, still very fresh, the nose shines opulently with stone fruit, good minerality, very young on the palate, shows much fruit, in ten years it will be a true pomegranate, we can only hope that many people will fill it.

Dom Pérignon is a legendary Champagne House and one of the most renowned in the world. In 1668, a young Benedictine monk, Dom Pierre Pérignon, was appointed procurator at the Abbey of Hautvillers. With the ambition to produce the "best wine in the world", he was deeply inspired and his vision revolutionized viticulture with standards that remain the reference for all champagne wines. The House's commitment is that champagnes can only be produced from a single year's harvest.

Dom Pérignon's productions were highly prized at that time. After Dom Pérignon's death, the price decreased somewhat, but not its popularity. The 1921 vintage is undoubtedly the best vintage. Dom Pérignon champagnes have very long aging potential.
