Dom Pérignon is a legendary vintage champagne in France. In 1668, a young monk Dom Pierre Pérignon, moved the mission to create the "world's best wine". Such ambition revealed in this young monk thirty years ago, a visionary and extraordinary audacity. The engagement of Dom Perignon is that all the Champagnes must be produced only with the harvest of the same year.
The productions of Dom Pérignon were very popular at that time. When Dom Pérignon died, the price dropped somewhat, but not its popularity. The 1921 vintage is unquestionably the best vintage. Dom Pérignon champagnes are very long aging.

(07-2014) Tasting at least 10-15 years younger, the wine served up a long impression of fresh citrus, brioche and honeyed lemons with ample bubbles and freshness. This was so good, I really wish I had more of this beauty stashed away in my cellar.
(12-1994)
(04-2017) When Dom ages well, it becomes a generous, Montrachet-like white wine in its depth and complexity, with just a sparkling edge. Gorgeous, honeyed, biscuity beauty with a fairly long finish.
