Tasting Notes: 1983 was a rainy year marked by an exceptional late season. The wines are aromatic, with great intensity and possess a certain sweetness on the palate. With good concentration, aromatic and round, the 1983 vintage is a beautiful success for Cheval Blanc during a rainy and difficult year for the Right Bank, saved by an exceptionally hot August and especially by an ideally dry September. The color is of medium intensity and displays a brick red hue tending towards orange. The nose is very powerful and intense with initial animal aromas, followed by notes of undergrowth and humus. When swirled, sweet impressions appear, with notes of acacia flower and beeswax. The attack is voluminous, round and alcoholic, giving the impression of a certain sweetness. It's a smooth wine with notes of cachou and anise on the finish. The mid-palate, very concentrated, is dominated by blackcurrant aromas. Of medium length, the finish is a bit hard and tannic, but of very great intensity.

Grape Variety/Blend: Cabernet Franc (~50%), Merlot (~45%), Cabernet Sauvignon (~5%) (variations are possible from one vintage to another)

Aging: Aged for 18 to 22 months in oak barrels (100% new)

Maturity: Aged wine

Food and Wine Pairing: The wines of the château pair very well with all types of red meat, game, dishes with sauce, and also fish dishes as long as their recipe includes an element linked to the earth (potatoes, mushrooms, etc.). For cheeses, opt for strong cow's milk cheeses (Munster, Maroilles, aged Mimolette). Finally, for desserts, the choice will be chocolate or coffee-based desserts.

Very pale with brick rim – very rich, complete and glorious. Long and peacock’s tale on the finish. Very delicate – rather overwhelmed by the heavily spiced potstickers and matsutake mushroom emulsion served avec – shame because it’s still a very beautiful wine but it did not show its best with this strongly flavoured food.

Tasted single blind at the Fine Wine Experience horizontal in London. A deep garnet core. A very well defined, herbaceous nose, with tobacco, chestnut, savoury fruit and a touch of dates. Quite complex and with very good vigour, the Cabernet Franc right in the (slightly bretty?) saddle. After thirty minutes, a lovely menthol character coming through. The palate is medium-bodied, very well balanced with fine tannins and superb acidity. Very well poised with great tension. Pure blackberry, raspberry, Chinese tea, tobacco and dried leaves. Lovely, elegant, very focused finish. Superb Cheval, multi-faceted if not as sophisticated as the ‘85.

Château Cheval Blanc

Château Cheval Blanc is a wine estate located in the commune of Saint-Emilion, on the border of the Pomerol appellation. The Château is a Premier Grand Cru Classé A in the official classification of Saint-Emilion classified growths. The vineyard consists of a single 37-hectare plot with several grape varieties: Cabernet Franc (49%), Merlot (47%), and Cabernet Sauvignon (4%). The estate produces the "Grand vin de Cheval Blanc" in red as well as a second wine "Le Petit Cheval" which is made in both red and white.

Cheval Blanc is one of the most consistent estates in the world, with the ability to be excellent at any age. The château's greatest vintages are 1921, 1945, the 1947 vintage, and 1949. There are also great successes in the 1950 vintage, 1953 wines, and the grand crus of 1959 and 1961. Finally, the wines from the 1990, 1998, and 2000 vintages are excellent.
