Tasting Notes: 1983 is a rainy year marked by an exceptional late season. The wines are aromatic, of great intensity, and possess a certain sweetness on the palate. Well concentrated, aromatic, and beautifully rounded, the 1983 vintage is a great success for Cheval Blanc during a rainy and difficult year for the Right Bank, saved by an exceptionally warm August and, above all, an ideally dry September. The color is of medium intensity, displaying a brick-red hue tending toward orange. The nose is very powerful and very intense, with initial impressions of animal aromas, followed by notes of undergrowth and humus. On swirling, sweet impressions emerge, with notes of acacia blossom and beeswax. The attack is full-bodied, all roundness and alcohol, giving the impression of a certain sweetness. It is a suave wine with notes of catechu and anise on the finish. The mid-palate, very concentrated, is dominated by blackcurrant aromas. Of medium length, the finish is slightly firm and tannic, but of very great intensity.

Grape Variety / Blend: Cabernet franc (~50%), Merlot (~45%), Cabernet Sauvignon (~5%) (variations are possible from one vintage to another)

Ageing: Aged for 18 to 22 months in oak barrels (100% new)

Maturity: 1990 - 2050

Food and Wine Pairing: The château's wines pair very well with all types of red meat, game, sauced dishes, and even fish provided their recipe includes an earthy element (potatoes, mushrooms, etc.). For cheese, opt for strong cow's milk cheeses (Munster, Maroilles, aged Mimolette). Finally, for sweet pairings, the choice will lean toward chocolate or coffee desserts.

Very pale with brick rim – very rich, complete and glorious. Long and peacock’s tale on the finish. Very delicate – rather overwhelmed by the heavily spiced potstickers and matsutake mushroom emulsion served avec – shame because it’s still a very beautiful wine but it did not show its best with this strongly flavoured food.

Tasted single blind at the Fine Wine Experience horizontal in London. A deep garnet core. A very well defined, herbaceous nose, with tobacco, chestnut, savoury fruit and a touch of dates. Quite complex and with very good vigour, the Cabernet Franc right in the (slightly bretty?) saddle. After thirty minutes, a lovely menthol character coming through. The palate is medium-bodied, very well balanced with fine tannins and superb acidity. Very well poised with great tension. Pure blackberry, raspberry, Chinese tea, tobacco and dried leaves. Lovely, elegant, very focused finish. Superb Cheval, multi-faceted if not as sophisticated as the ‘85.

Château Cheval Blanc

Château Cheval Blanc is one of the most iconic estates of the Saint-Émilion appellation, on the right bank of Bordeaux. Classified as Premier Grand Cru Classé A, it holds a singular place in the history of the Bordeaux vineyard, both for the exceptional consistency of its quality and for the uniqueness of its terroir and grape varieties. Located at the natural border between Saint-Émilion and Pomerol, the estate benefits from a rare mosaic of soils in Bordeaux, combining gravel, clay and sand.

The vineyard of Château Cheval Blanc extends over approximately 39 hectares, divided into numerous distinct parcels, each vinified separately in order to preserve the expression of its terroir. The grape variety, dominated by Cabernet Franc, complemented by Merlot and a small proportion of Cabernet Sauvignon, constitutes an exception in Saint-Émilion and gives the wines a slender structure, natural freshness and remarkable aging potential.
