In magnum It had been seventeen years since I last tasted this wine. The least one can say is that it is holding up very well. In magnum it still has a long life ahead of it. The color is intense and slightly evolved towards brown. The fruity, aromatic nose develops a bouquet around a note of cedar and smoke. In hindsight, I would say that its aromatic note is on the verge of complete grape maturity, but the general character is noble, with a sensation of tar. Dense wine on the attack, developing smoothly, with a taste of cherry mingled with notes of cedar. The mid-palate is rich and delicious. The wine finishes quite deep with good length and a soft texture.

Similar to the 1979, but leaner and more austere, the 1978 Canon still needs time to develop. Dark ruby with some amber, this relatively big, tannic wine has evolved much slower than I expected.

Château Canon

Château Canon is a 34-hectare wine estate located in Saint-Emilion in the Gironde department. Classified as a Premier grand cru classé B in the Saint-Emilion classification, Château Canon was one of the first estates in the Bordeaux region where the vineyard held a primary place. Despite being a neighbor of Ausone and a 1er grand cru, the wine has never reached the level one might expect from it.

The acquisition of Château Canon in 1996 by the Chanel company has nevertheless given a second wind to this growth. Indeed, significant investments, particularly in the winery, have improved the quality of the wine. Château Canon is known for its meticulous selection of grapes in three stages, and there is no doubt that the work undertaken by the estate will increasingly bear fruit.
