(10-2008) In magnum It had been seventeen years since I had tasted this wine. The least we can say is that it is very good. In magnum he still has a long life in front of him. The color is intense and slightly evolved towards the brown. The fruity, aromatic nose develops a bouquet around a note of cedar and smoke. In hindsight, I would say that its aromatic note is at the edge of the full maturity of the grape, but the general character is noble, with a sensation of tar. Dense wine with an attack, developing sweet, with a cherry flavor mixed with cedar notes. The mid-palate is fat and delicious. The wine finishes fairly deep on a good length and a soft texture.

(01-1998) Similar to the 1979, but leaner and more austere, the 1978 Canon still needs time to develop. Dark ruby with some amber, this relatively big, tannic wine has evolved much slower than I expected.

(04-1995) A quite complete wine and an excellent '78. Terrific aromas and flavors of cherry, earth and vanilla. Medium in body and very fruity; long, velvety finish.

Château Canon

The Château Canon is a french estate located in Saint Emilion in Gironde. It is a First classified growth B.

The Château Canon was one of the first castles of Bordeaux, where the vines was a main square. Neighbor Ausone or The Canon Gaffeliere, wine, yet the first vintage, never reached the level that could be expected of him. The acquisition of Chateau Canon 1996 by the Chanel nevertheless gave new life to this wine. Indeed, major investments, particularly in the cellar have improved the quality of wine. Château Canon is known for its careful selection of grains in three stages and no doubt the work begun by the field will increasingly fruitful. Taste therefore preferably recent years to take the full measure of the uniqueness of Château Canon.
