An enjoyably melted tannic structure, with the white pepper and saffran lick of limestone, sappy rise on the finish, with raspberry, redcurrant, crushed roses, generous and creamy through the mid palate (although you might want to head to the 2009 at this point for an even clearer example of that, as Canon takes time to reach its peak). This has poise and delicacy, and excellent balance. 36hl/h yield, 80% new oak, 3.7ph, harvest September 29 to October 9. John Kolasa’s last vintage, with current director Nicolas Audebert overseeing ageing.

The palate captivates with the delicacy of its touch and fleshy texture, without the tannin ever intervening. It drinks like milk and lingers long on the finish.

Château Canon

Château Canon is a 34-hectare wine estate located in Saint-Emilion in the Gironde department. Classified as a Premier grand cru classé B in the Saint-Emilion classification, Château Canon was one of the first estates in the Bordeaux region where the vineyard held a primary place. Despite being a neighbor of Ausone and a 1er grand cru, the wine has never reached the level one might expect from it.

The acquisition of Château Canon in 1996 by the Chanel company has nevertheless given a second wind to this growth. Indeed, significant investments, particularly in the winery, have improved the quality of the wine. Château Canon is known for its meticulous selection of grapes in three stages, and there is no doubt that the work undertaken by the estate will increasingly bear fruit.
