It is always interesting to taste an older vintage of wine for the time. Tasted blind, this was a beauty. Silky, elegant and refined in texture, the wine opened with a spicy, earthy, tobacco, dark cocoa and red plum nose. On the palate, with its soft, caressing textures, the finish left you feeling great, especially with all the rocks, stones, sea salt and cherries in the endnote.

Château Pavie is one of the greatest growths in the Saint-Émilion appellation, elevated to the top of the appellation's classification among the Premier Grands Crus Classés A. Spanning 37 contiguous hectares southeast of the village, it occupies an entire slope — an asteriated limestone plateau, a clay-limestone hillside, and a sandy-clay foothill — where Merlot predominates, complemented by Cabernet Franc and Cabernet Sauvignon. Taken over by the Perse family in 1998, the estate produces a deep, powerful wine built for long aging.

Its vintages span two eras: the great classics from before the takeover, such as the 1990, sit alongside the highlights of the Perse era — the 2000 vintage, the 2009 wine and the 2020 — while the second wine, Arômes de Pavie, offers an initial introduction to the house style.
