Dégusté lors d'un déjeuner hors ligne au Ledbury. Intéressant à déguster après de nombreuses années. Il a un nez plutôt anguleux avec des cerises noires macérées, de la myrtille, du champignon, un peu de thym et une portance notable conférée par un peu d'AV. La bouche est mi-corsée avec des tanins grossiers et rustiques, des notes de sang séché, de thym, de goudron fondu et de graphite, bien que la finale soit plutôt maigre et ouvertement feuillue, trop sèche à mon goût. Château Pavie is one of the greatest growths in the Saint-Émilion appellation, elevated to the top of the appellation's classification among the Premier Grands Crus Classés A. Spanning 37 contiguous hectares southeast of the village, it occupies an entire slope — an asteriated limestone plateau, a clay-limestone hillside, and a sandy-clay foothill — where Merlot predominates, complemented by Cabernet Franc and Cabernet Sauvignon. Taken over by the Perse family in 1998, the estate produces a deep, powerful wine built for long aging.

Its vintages span two eras: the great classics from before the takeover, such as the 1990, sit alongside the highlights of the Perse era — the 2000 vintage, the 2009 wine and the 2020 — while the second wine, Arômes de Pavie, offers an initial introduction to the house style.
