Domaine Gauby is a benchmark of the Roussillon. Located in the commune of Calce, twenty kilometres north-west of Perpignan, this 85-hectare family estate — of which 45 are planted with vines — single-handedly transformed the perception of a region that the wine world still regarded with condescension at the beginning of the 1990s. It was Gérard Gauby, a former international rugby player turned winemaker, who elevated the estate to this level of excellence. His son Lionel Gauby, trained in particular alongside Olivier Jullien at Mas Jullien, now oversees the winemaking with the same exacting standards.

The conversion to organic farming in 1996 was born of a shock: one morning, Gérard Gauby discovered dead birds on a plot that had been treated the day before. He stopped using chemicals overnight, radically. The estate has since been managed using biodynamics, with homemade plant-based preparations, agroforestry, and a mixed farming approach that sees almond trees and olive trees growing alongside the vines.

The Gauby style has been refined over the decades towards ever greater freshness and elegance: tannins of a rare grain for the Roussillon, explosive minerality in the whites, a depth and digestibility that allow the great cuvées to age for ten to fifteen years. The vintages 2014, 2015, 2016, 2018, 2019 and 2021 are among the greatest expressions of the estate.
