Dotorwine (04-2016) : A full, red color with brick reflections. The aroma is mellow and delicate, complex but not redundant with fine notes of chanterelles, ink and strawberry tree. With breathing the bouquet becomes almost ethereal and impalpable without ever settling to then close on a beautiful note of beech bark. The mouthfeel, compared to the previous giants, is almost pubescent, sinuous and very fresh.

Château Ausone

Château Ausone produces grand cru Bordeaux wines with the Saint Emilion appellation in the south of France. This estate is one of the 4 châteaux to benefit from the classification of Premier Grand Cru Classé A along with Châteaux Angelus, Cheval Blanc and Pavie.

The 7-hectare vineyard is located on the slopes of Saint-Emilion. Built on the site of the villa of the Latin poet Ausonius, the estate benefits from a south-facing exposure, terraced vineyards, and a balanced and very old grape variety composition. The cellar, carved into the rock, is extraordinary. It has undergone extensive work to reinforce the solidity of the structure. As for the wines, known to take time to assert themselves, they are dense, intense, and have an aromatic complexity that allows Ausone to rank among the very top estates in Bordeaux. The main grape varieties are Merlot and Cabernet Franc, with a majority of 55% Cabernet Franc.

Among the greatest vintages of Château Ausone, the 1982 and 1983 vintages are excellent. The 1995 vintage, 1998 grand cru wine and the 2008 wines are exceptional. Finally, the 2000 grand crus classés and the 2005 vintage are considered extraordinary vintages, with the grand crus even receiving a score of 100/100 from Robert Parker.
