The Dauvissat 2007 Chablis La Forest (the “s” and “t” being reversed from the usual spelling at this address) is gloriously buoyant, open-knit, and generously perfumed, while at the same time possessed of vivid crushed stone and chalk dust all the way through. Suggestions of white truffle and iris waft ethereally throughout, while subtle suggestions of toasted nuts, iodine, clam liquor, and fruit pit add underlying, persistent piquancy. And for all of this wine’s energized and rarified nature, as well as its overt mineral character, it also evinces a subtle and winsome hint of  creaminess. This is about as nuanced and rivetingly multi-faceted as premier cru Chablis gets, and it even tasted this way right off the bottling line! Expect at least a decade of enthralling pleasure and intrigue here.

This Chablis is a bit disappointing because one expects more from Dauvissat. It does not have the linear focus and intensity as La Forest from other vintages such as the 2005 and 2006. The wine offers hints of citrus flavours and vibrant acidity with a chalky finish. The components are there but the wine lacks the energy and intensity of their other vintages. Drink now.

Domaine Vincent Dauvissat is one of the most revered names in Burgundy, often cited alongside Raveneau as the absolute pinnacle of the Chablis appellation. The family history began in 1931, when Robert Dauvissat bottled his own wines — a practice that was pioneering at the time. His son René elevated the estate to the elite of the vineyard, before Vincent took the helm in 1989. Today, his children Étiennette and Ghislain represent the fourth generation.

The vineyard spans approximately 12 hectares planted on the famous Kimmeridgian marl, rich in fossil oysters, which gives the wines their characteristic saline minerality. The estate owns two Chablis Grands Crus, Les Clos and Les Preuses, as well as superb Premiers Crus — the renowned La Forest, Vaillons and Séchet — complemented by a Chablis village, a Petit Chablis and a little-known red Irancy. The vines have been farmed biodynamically since the late 1990s, without any claimed certification.

In the cellar, the style is resolutely classical: low-intervention winemaking, modest yields and aging faithful to the traditional Chablis feuillette of 132 liters, with no excess of new oak. The result is a range of Chardonnays of crystalline purity, taut, precise and endowed with an immense aging potential. Produced at around 70,000 bottles per year and allocated in small quantities, the white wines of Vincent Dauvissat rank among the most sought-after in Burgundy.
