(08.2021) Aromas of pear, green apple and citrus oil mingling with hints of fresh bread and oyster shell introduce Dauvissat's 2018 Chablis Grand Cru Les Clos, a full-bodied, layered wine that's ample and elegantly muscular, girdled by bright acids and revealing more overt structure than Les Preuses at this stage. Concluding with a long, chalky finish, even in the demonstrative 2018 vintage, this will merit a bit of patience.

Domaine Vincent Dauvissat is one of the most revered names in Burgundy, often cited alongside Raveneau as the absolute pinnacle of the Chablis appellation. The family history began in 1931, when Robert Dauvissat bottled his own wines — a practice that was pioneering at the time. His son René elevated the estate to the elite of the vineyard, before Vincent took the helm in 1989. Today, his children Étiennette and Ghislain represent the fourth generation.

The vineyard spans approximately 12 hectares planted on the famous Kimmeridgian marl, rich in fossil oysters, which gives the wines their characteristic saline minerality. The estate owns two Chablis Grands Crus, Les Clos and Les Preuses, as well as superb Premiers Crus — the renowned La Forest, Vaillons and Séchet — complemented by a Chablis village, a Petit Chablis and a little-known red Irancy. The vines have been farmed biodynamically since the late 1990s, without any claimed certification.

In the cellar, the style is resolutely classical: low-intervention winemaking, modest yields and aging faithful to the traditional Chablis feuillette of 132 liters, with no excess of new oak. The result is a range of Chardonnays of crystalline purity, taut, precise and endowed with an immense aging potential. Produced at around 70,000 bottles per year and allocated in small quantities, the white wines of Vincent Dauvissat rank among the most sought-after in Burgundy.
