Starting to look a little more deeply coloured compared with the 1996. Quite a woody smell at first. Broad and yeasty and incredibly rich on the palate, balanced by Seville orange as well as intense citrus. Complex and just gently sparkling. Mouthfilling as well as very long. This is becoming more a wine than a fizz – if I am allowed to referred to Salon as 'fizz'.

The Maison Salon Champagne is a French house established in 1920 by Eugène-Aimé Salon. Unlike other Champagnes from the region, Maison Salon produces its Champagnes without blending, focusing on a single grape variety: Chardonnay.

In 1905, founder Aimé Salon produced "Le Mesnil-sur-Oger" using a single grape variety: Chardonnay, from a single cru and vintage: 1905. An iconic and prestigious wine. Long kept for himself, it wasn't until 1920 that he decided to commercialize this wine and establish his estate.

Today, the Champagne production remains the same: crafted with grapes from the finest Chardonnay plots for a 100% Chardonnay wine. Maison Salon still produces a single Champagne from a 1-hectare plot "Jardins du Salon" and 19 other plots in Mesnil-sur-Oger. The Champagnes are aged for ten years in cellars before revealing their complexity and finesse. During the 20th century, the House produced 37 vintages. Among the greatest successes, the House counts the vintages 1905, 1966, 1995, 1996, 1997...

The Maison Salon Champagne was acquired by the Laurent-Perrier group, which also owns the Champagne house Delamotte with whom Salon shares its premises.
