Monsieur Berthed-Bondet was kind enough to uncork one of the few remaining bottles of his 1989 Château Chalon, one of the finest vintages of the appellation and one of the few I had not tasted of all the vintages he has produced since he started in 1984. It feels perfect for current drinking and seems young at age 30. It has developed and classical aromas of spices, saffron, white truffle, smoke and a touch of diesel, green nuts, iodine and curry. It feels very complete and with plenty of life ahead of it in bottle. I think I'd rank it along the fantastic 1988. He described Château Chalon as a refreshing old wine with something exotic not found in other wines, and like some bottles from Burgundy, it might be a bit hard to drink when young. This is a great bottle of Château Chalon!
