Château Rabaud Promis

Château Rabaud-Promis is a wine estate near Bordeaux. Classified as a First Growth in the 1855 Sauternes classification and located near Château d'Yquem. The grape varieties consist of 80% Semillon, Sauvignon and a small amount of Muscadelle.

The harvest is done manually and takes place in several passes, meaning multiple successive passes to pick the grapes concentrated by botrytis cinerea, the fungus responsible for noble rot. The subsequent vinification is done plot by plot, with fermentation in stainless steel or oak tanks and aging for 12 to 18 months in barrels of varying newness depending on the vintage.
