Among the most famous wines of the Cote d'Or, Domaine Antonin Guyon, owned by the family for generations, spread over nearly 50 hectares. Of Savigny-les-Beaune, the wine is made in a beautiful winery, combining traditional methods with the most modern technical means. ... The whites are pressed in whole grains, a settling clarified musts and are sung for a complete fermentation in barrel. The wines remain on the lees are stirred once a week, the bottling usually takes place after one year, eighteen months for the Corton Charlemagne. . . . . The Reds are picked and vinified in open vats with punching down twice a day in the Burgundian tradition. Temperatures are controlled to keep up all the flavors. After a light racking, the wines are aged for 18 months in oak barrels, some new wood. . . . . All wines are aged in oak barrels and bottled in the field.
