Tasted decanted and blind. Dark color, medium intensity, evolved. Fruity and animal nose presenting a bouquet where cedar dominates. Caressing, fruity, spicy, silky mouthfeel with flavor in the middle. The wine is well constructed and finishes on fruit, with a note of spice, fine and rather aromatic tannins. Beautiful surprising retro-olfaction. Upon discovering the label, I am no longer surprised. Canon truly has a great terroir.

Close to fully mature, the floral, tobacco, peppery boysenberry, smoke and earthy nose is a turn on. Medium/full bodied, with a bit of a green bite in the finish that also provides minty, black cherry notes, the wine is soft, with a hint of old-school rusticity on the palate. The wine is more savory than sweet, which makes sense with its slightly strict palate presence. Decanted about 1 hour in advance of tasting, this is probably not a long-term hold. This is a wine to like, but not to love. If you are holding on to any bottles, it is time to pop a cork.

A beautiful wine, and probably the last great Canon until the new administration gets its act completely together, this wine still has a deep rubygarnet color, with some lightening at the edge. A knockout nose of sweet black fruits (primarily currants) intermixed with a bit of cherry, vanilla, and an almost roasted note is enticing and persistent. Full-bodied, moderately tannic, with excellent extraction, flavor, expansiveness, and texture, this is a pure, impressively endowed Canon.

Château Canon

Château Canon is a 34-hectare wine estate located in Saint-Emilion in the Gironde department. Classified as a Premier grand cru classé B in the Saint-Emilion classification, Château Canon was one of the first estates in the Bordeaux region where the vineyard held a primary place. Despite being a neighbor of Ausone and a 1er grand cru, the wine has never reached the level one might expect from it.

The acquisition of Château Canon in 1996 by the Chanel company has nevertheless given a second wind to this growth. Indeed, significant investments, particularly in the winery, have improved the quality of the wine. Château Canon is known for its meticulous selection of grapes in three stages, and there is no doubt that the work undertaken by the estate will increasingly bear fruit.
