From a quality vineyard, transported by ships to Northern European countries, the wines of Poitou, La Rochelle and Angoumois have been delighting the English, Dutch and Scandinavians since the 13th century. From the 17th century, they were transformed into eau-de-vie, which would be aged in oak barrels to become Cognac. Thus began the adventure of a town that would become the capital of a world-renowned trade. The long maturation process of Cognac, which sometimes lasts for decades, takes place thanks to the porosity of the wood which allows indirect contact between the eau-de-vie and the ambient air. Thus, the substances extracted from the oak wood by the Cognac modify the physical appearance of the Cognac, giving it a color ranging from golden yellow to burning brown. This transfer of the natural characteristics of oak causes, over time, the formation of "rancio" and develops the bouquet of Cognac
