The wine aging at Château-Bas is carried out in barrels for the reds and whites that will make up the Cuvée du Temple, and in vats for all others. Well-born Château-Bas wines are easier to age. This maxim guides our winemaking effort. All the care taken to vinify properly will be rewarded during the aging process. What savings are made when the only work consists of managing the oxygenation of our wines. The reds will be racked two to three times during winter, blended in spring, and left to rest until bottling. The latter will be carried out one to two years after harvest. The rosés and whites will be marketed sooner. From March for the earliest ones, generally the Alvernègue, April or May for Pierres du Sud, May or June for Cuvée du Temple. Aging on fine lees ensures body and aromatic persistence to our finest cuvées.
